
Ice Cream With Plant Sweetener Caused Smaller Blood Sugar Rise
Both ice creams made with brazzein, a super-sweet plant protein, gave a smaller blood-sugar hill, not a steep spike, than regular sugary ice cream. In a chance-assigned test, Russian nutrition scientists gave 101 adults with metabolism-linked fatty liver 100-gram vanilla portions with sugar, brazzein, or brazzein plus inulin, a fiber. Longer tests must see if the short-term benefit lasts.
