Brazzein-sweetened ice cream cut blood sugar spikes in 101-person MASLD trial
Russia's Federal Research Centre of Nutrition, Biotechnology and Food Safety tested 100-gram vanilla ice cream sweetened with sugar, brazzein, and brazzein plus inulin in a randomised trial of 101 adults with metabolic dysfunction-associated steatotic liver disease. Both brazzein versions produced lower post-meal blood sugar spikes than sugar. Longer trials are needed to see if acute effects bring lasting benefit.
