
Brazzein Ice Cream Lowered Blood Sugar Spikes in Liver-Disease Trial
Both brazzein versions of vanilla ice cream raised blood sugar less after eating than sugar in a randomised trial by Russia's Federal Research Centre of Nutrition, Biotechnology and Food Safety. The test gave 101 adults with MASLD, a fatty liver condition, 100-gram portions with sugar, brazzein (sweet protein), or brazzein plus inulin (fiber). Lasting benefit needs longer trials.
