Moment Pro Camera II and Blackmagic Camera for iOS support the iPhone 18 Pro's variable aperture with 10 presets from f/1.48 to f/4.0 in 1/3-stop increments. Apple's SDK enables the finer granularity, including options between the native iOS settings.
